Healthy No Bake Breakfast Bars!

img_5061You know the best diets are the ones where you can eat things that feel naughty but are not! Personally, I tend to feel guilty, but why feel guilty when you can eat something as delicious as this for breakfast, and still lose weight?

Anyway, though I haven’t mentioned it in the blog or page or twitter, or anywhere, the last three months have been consisting of some diet changes, ordered by the doctor and put to motion immediately. And if the ticker at the end of the page on the right hand side is any indication, it’s working, and it’s working without me being hungry, or craving bad foods.

So, I finally reached my first goal yesterday, and I am 35.7lbs (almost 17kg) lighter, and it’s no easy feat for those who have been battling weight issues their whole lives. You know, how hard it is.

Anyway, so I am not going to feel guilty anymore and I made these yummy breakfast bars, because they are part of this months diet plan and I CAN eat them.

Plus making them myself makes me feel better about its contents.

They are easy, so here’s how to make them!

Ingredients:

1/4 cup butter (you can skip this if you want, I didn’t)

1/4 cup honey

1/3 cup coconut sugar (or brown sugar)

1/2 tsp vanilla extract

2 cups oats

2 tbs muesli mix or dried fruit and nuts

Finely chopped dark chocolate, or chocolate chips, preferably unsweetened.

1. In a small saucepan, melt the butter, honey and sugar, then add the vanilla and stir. Leave it for a few more minutes in low heat, until it becomes bubbly.

2. In a bowl mix the oats, muesli and anything else you prefer.

3. Pour the “caramel” over the oats and stir until well combined. These bars will be a bit soft, so you can add more oats if you like, but I prefer them this way.

4. Line a small tray with parchment paper and pour your mixture on it. Spread it out and press it so that the oats stick to each other. Add your chocolate chips on top, and place in the fridge for a few minutes.

5. Once cold, score and cut in bars. Store them in a plastic container. I keep mine in the fridge, though you don’t have to.
